1 tbsp
unsalted butter or oil
1 lb (450 g)
boneless, skinless chicken thighs
1 medium
carrot
2 12 cups
sliced mushrooms
1 pkg
Coq au Vin Seasoning
1 cup
dry red wine

Preparation
  1. Heat butter or oil in Sauté Pan. Slice chicken thighs in half, add to pan, and brown. 
  2. Meanwhile, thinly slice carrot. 
  3. Add carrot and mushrooms to pan. Stir-fry 3 min, or until mushrooms start to soften. 
  4. Stir in seasoning and wine; bring to a boil. Cover and reduce heat to medium-low. Simmer 10 min. Uncover and simmer for 3–5 min, or until sauce thickens.
Tips

Swap low-sodium chicken broth for dry red wine or use a combination. 

For a deeper flavour, marinate chicken in red wine and seasoning overnight. Reserve the marinade and use in pan to cook chicken. 

Perfectly Balance Your Plate

Serve with 1 cup mashed potatoes.
